Last Day of Holiday Vacation

Today was a perfect day, the best way to end a great two week vacation.

It was warm, clear and sunny again today so while Gilligan slept in the sun we went to Redondo Beach to get  some exercise and fresh air.

We parked near the pier and had lunch at the Wildflower Cafe, have never been there before but will definitely be going back!  It's a tiny place, but their food was delicious.  Probably one of the best restaurant salads I've had.


After lunch we walked around the Riviera Village area, we got a total of 5 miles today.  Much more than I was expecting. 

We ended up back at the pier and stopped at Naja's to watch the 49ers play Green Bay.  It was a good game, and the 49ers won!  



Then we headed back home and made dinner, swordfish with cucumber melon salsa.  It turned out really well.  The salsa was delicious and we have a lot leftover to use throughout the week.  With the fish we also had leftovers of the green chili soup made from the bone and meat scraps off the prime rib.  Added a simple side salad for a fantastic meal!

Great Northern Beans

Homemade chicken stock

Chicken Sausage

Christmas Eve Dinner

Steve made prime rib for our Christmas Eve dinner.  To say it was delicious is an understatement.  It was a perfect medium-rare doneness with a crunchy herb crust.

Herbs, salt and pepper to season

Slow roasted in the oven for 3 hours

Finished off by broiling to get the crust

Add a nice glass of wine


Christmas Eve dinner is served!
